As we transition into the cooler months, our palates naturally gravitate toward heartier, more robust flavors. Delicata squash, also known as the sweet potato squash, is one of my favorite seasonal fall foods. Its delicate skin and sweet, nutty flavor make it a versatile ingredient in fall cooking. And, YES, you can eat the skin!

Beyond its delectable taste, delicata squash boasts an impressive nutritional profile. Rich in vitamins A and C, this squash supports immune health, making it a great addition to your meals as we approach the colder seasons. Additionally, delicata squash provides a healthy dose of fiber, aiding digestion and promoting a satisfied, full feeling.
Variations and Dairy Free and AIP Elimination Phase Substitutions
Part of the fun of cooking is making a recipe your own! Don’t be afraid to play with the seasoning to create your own personalized take on delicata squash. With it’s mild flavor profile, it’s equally good with savory additions (like garlic) or a little sweetness (try omitting the salt and pepper, adding cinnamon and serving with some whipped coconut cream!).
Dairy free? Swap out the butter for ghee (if tolerated) or coconut oil. Omit the parmesan cheese completely, or sub in Nutritional yeast to impart some “cheesy” flavor!
For AIP Elimination Phase – Follow the dairy free swaps above and omit the black pepper.

Roasted Delicata Squash
Equipment
- 1 13 X 9 baking dish or rimmed baking sheet
- 1 kitchen knife
- 1 spoon for scooping out seeds
- 1 small glass bowl or saucepan for melting better
- 1 fine cheese grater
Ingredients
- 1 medium delicata squash about 1.25 lbs
- 3 tbsp melted butter
- 1.5 ounces parmesan cheese, grated (about 1/3 cup)
- 1/4 tsp fine sea salt
- 1/4 tsp ground black pepper
Instructions
- Heat the oven to 425° Fahrenheit. Set a 13-inch by 9-inch baking dish aside. You can also use a rimmed baking sheet.
- Cut the squash in half, lengthwise. Scoop out and discard the seeds. Cut each squash half into ¾-inch-thick slices.
- Spread half of the melted butter over the bottom of the baking dish.
- Sprinkle all but two tablespoons of the Parmesan cheese on top of the melted butter.
- Arrange squash slices on top of the cheese.
- Drizzle the remaining butter over the squash and spread it over each piece.
- Season with salt and pepper and sprinkle the remaining cheese on top
- Bake the delicata squash for 20 to 30 minutes, or until golden brownand tender.
Notes
- 1 tsp garlic powder
- 1/8-1/4 tsp cayenne pepper
- 1/4-1/2 tsp ground cinnamon
- If tolerated, may use ghee instead of butter or substitute coconut oil
- Omit Parmesan Cheese or substitute with Nutritional Yeast

- Omit the ground black pepper
