Roasted Delicata Squash

A deliciously crave-able side dish for your Fall table

Equipment

  • 1 13 X 9 baking dish or rimmed baking sheet
  • 1 kitchen knife
  • 1 spoon for scooping out seeds
  • 1 small glass bowl or saucepan for melting better
  • 1 fine cheese grater

Ingredients
  

  • 1 medium delicata squash about 1.25 lbs
  • 3 tbsp melted butter
  • 1.5 ounces parmesan cheese, grated (about 1/3 cup)
  • 1/4 tsp fine sea salt
  • 1/4 tsp ground black pepper

Instructions
 

  • Heat the oven to 425° Fahrenheit. Set a 13-inch by 9-inch baking dish aside. You can also use a rimmed baking sheet.
  • Cut the squash in half, lengthwise. Scoop out and discard the seeds. Cut each squash half into ¾-inch-thick slices.
  • Spread half of the melted butter over the bottom of the baking dish.
  • Sprinkle all but two tablespoons of the Parmesan cheese on top of the melted butter.
  • Arrange squash slices on top of the cheese.
  • Drizzle the remaining butter over the squash and spread it over each piece.
  • Season with salt and pepper and sprinkle the remaining cheese on top
  • Bake the delicata squash for 20 to 30 minutes, or until golden brown
    and tender.

Notes

Variation Ideas:
  • 1 tsp garlic powder
  • 1/8-1/4 tsp cayenne pepper
  • 1/4-1/2 tsp ground cinnamon
Dairy Free Substitutions
  • If tolerated, may use ghee instead of butter or substitute coconut oil
  • Omit Parmesan Cheese or substitute with Nutritional Yeast
