Roasted Delicata Squash
A deliciously crave-able side dish for your Fall table

1 13 X 9 baking dish or rimmed baking sheet
1 kitchen knife
1 spoon for scooping out seeds
1 small glass bowl or saucepan for melting better
1 fine cheese grater
- 1 medium delicata squash about 1.25 lbs
- 3 tbsp melted butter
- 1.5 ounces parmesan cheese, grated (about 1/3 cup)
- 1/4 tsp fine sea salt
- 1/4 tsp ground black pepper
Heat the oven to 425° Fahrenheit. Set a 13-inch by 9-inch baking dish aside. You can also use a rimmed baking sheet.
Cut the squash in half, lengthwise. Scoop out and discard the seeds. Cut each squash half into ¾-inch-thick slices.
Spread half of the melted butter over the bottom of the baking dish.
Sprinkle all but two tablespoons of the Parmesan cheese on top of the melted butter.
Arrange squash slices on top of the cheese.
Drizzle the remaining butter over the squash and spread it over each piece.
Season with salt and pepper and sprinkle the remaining cheese on top
Bake the delicata squash for 20 to 30 minutes, or until golden brownand tender.
Variation Ideas:
- 1 tsp garlic powder
- 1/8-1/4 tsp cayenne pepper
- 1/4-1/2 tsp ground cinnamon
Dairy Free Substitutions
- If tolerated, may use ghee instead of butter or substitute coconut oil
- Omit Parmesan Cheese or substitute with Nutritional Yeast
